The original barbecue is an indirect cooking technique, which consists in slowly cooking large pieces of meat using the heat and the low temperature fumes of a fire of embers. A grill instead is a direct cooking, short and violent, of relatively small pieces of meat placed directly on embers at high temperature.

It is a plan formed by a grid, where in the underlying part a fire is lit which will generate embers able to cook in a direct way, positioning the dish on the appropriate grill.

Consisting of a soapstone or lava stone plate with high thermal inertia, or even a cast iron plate. The stone plates can be heated on the flame and then moved to keep food warm or even to cook them separately. They allow you to avoid added seasonings, but you have to pay attention to foods that are too fat, to avoid uncontrolled drips.
-Spit or rotisserie,
Metal rod rotating around its own axis, to which the movement can be imposed manually or with the help of electric motors, on which the food to be cooked is locked, blocked by movable forks. It is positioned on special supports, whose distance from the embers is adjustable, usually placed on the sides of the hob. The best use is with the vertical brazier.
Indirect cooking barbecue
A technology created for gas barbecues is also used for small charcoal barbecues. It consists of the lower part of a funnel-shaped steel element, whose purpose is to collect the fats and cooking oils and let them flow into a collection tray to make your foods more dietary. In this way no flames are produced by falling fat on the charcoal, all the excess fats are eliminated, the cooking is indirect and complete, as the round shape of the lid creates a perfect convection motion inside the barbecue, making it uniform temperature. in some bbq it is possible to overturn the funnel and remove the lid to go to a direct cooking (see Outdoor items).
Domestic gas barbecues are generally approved for outdoor use only. Side grills, roasters and cooking supports are actually similar to those of wood-burning barbecues, but there are some specific components
